Christmas pizza wreaths
Put a festive twist on a Kid's favourite with Dean Edwards' Christmas pizza wreaths!
Serves: 2Prep: 15 minutesCook: 30 minutes
Ingredients:1 box ready rolled pizza dough
Tomato sauce:300g cherry tomatoes1 red onion, diced3 cloves garlic, crushed1 tbsp olive oil1 tsp dried oregano½ tsp caster sugarSalt and pepper
For the topping: 40g sliced pepperoni½ jar roasted red peppers, sliced150g mozzarella1 egg, beaten½ tsp dried oreganoFresh basil, few leaves
Over a low to medium heat fry the tomatoes, onion and garlic in a pan along with 1 tsp oil for 3-4 minutes. Add the oregano and sugar then season with salt and pepper. Place into a mini blender then blitz until smooth.
Shape the pizza dough into a 30cm diameter circle then place onto a lined baking sheet. Cut an X, approximately 9cm in diameter, into the centre of the dough followed by a vertical cut to form a star shape. Use a pizza cutter or a sharp knife.
Spread some of the tomato sauce onto the base making sure you leave a 1-2 cm gap around the edge and around the star. Reserve the remaining sauce for serving with the pizza. Place on the pepperoni, peppers and small chunks of mozzarella.
Pull one of the triangles created from the star marking in the centre of the dough and overlap it with the corresponding outside edge of the pizza, enclosing the filling. Repeat the action with each triangle until you have completed the pizza wreath shape.
Egg wash and sprinkle with the dried oregano and a pinch of salt
Cook in a preheated oven set at 200C / gas mark 6 for 20-25 minutes or until the crust is golden
Top with some fresh basil leaves then place a small bowl into the centre of the wreath filled with the remaining tomato sauce for dipping. Alternatively, you can fill with festive dip of choice. We suggest onion chutney, onion and chive or spice chutney!
