Melissa Hemsley's peanut butter noodles

Spicy Chicken Nutty Noodles with Fried EggsServes 2Prep: 10 minutesCook: Approximately 18 minutesIngredients165g whole-wheat noodlesExtra virgin olive oil2 tbsp sesame seeds2 tsp oil½ cabbage, leaves finely shredded3 spring onions, sliced2 eggsSea salt and black pepper100g leftover cooked chicken, shredded (optional)Sauce:2 cloves garlic, finely chopped2 tbsp smooth peanut butter, or other nut/seed butter1-2 tsp chilli flakes (to taste)1 tbsp apple cider vinegar2 tsp maple syrup1 tsp toasted sesame oil2 tbsp tamariA pinch of sea salt (or to taste)Method1. In a medium saucepan, cook the noodles in plenty of boiling water according to thepacket instructions until still al dente (for about 5 minutes instead of the usual 6-8),then rinse in cold water and drain well. Drizzle in a little oil to prevent them fromsticking.2. For the sauce: Whisk together the garlic, nut or seed butter, 1 tsp of the chilli flakes,apple cider vinegar, maple syrup, sesame oil, tamari, 5 tbsp hot water and taste forseasoning. Set aside.3. In a large frying pan, toast the sesame seeds on a medium heat for 30 seconds, thenset aside. Put the frying pan back on the hob add the 2 tsp oil and quickly fry theshredded cabbage and spring onions on a high heat for 45 seconds (not too long sothe cabbage retains some bite). Push the cabbage to one side of the pan and fry theeggs according to taste. Season the eggs and cabbage with salt and pepper.4. In the saucepan that the noodles were cooked in, add the cooked chicken with alittle oil and let it get hot through, next add the noodles and sauce. Gently toss andadd 2 - 3 tbsp more water if necessary. Ensure the chicken is piping hot.5. Divide the noodles between two plates or bowls, add a portion of the cabbage and afried egg to each and sprinkle with the remaining chilli flakes (if liked) and thereserved toasted sesame seeds, to serve.Tips- This is a freestyle recipe – use your choice of noodles (buckwheat noodles are delicious) and any type of green cabbage.- Add extra water if the noodles soak up too much of the sauce.- Try with a spoonful of kimchi to cut through the richness of the sauce.
