Nisha Katona's turkey tikka masala
Nisha Katona transports our tastebuds to India as she shows us how to spice up those Christmas turkey leftovers!
Serves 4Prep: 10 minutesCook: 20 minutes
Ingredients:4 tbsp vegetable oil2 medium onions, diced2 inches ginger, peeled and grated2 cloves garlic, crushed4 heaped tbsp tomato puree2 tbsp garam masala1 tsp turmeric⅛ tsp chilli powder2 tbsp brown sugar (or to taste)1 tsp salt (to taste)Jug of water, to loosenTurkey leftovers, diced2-3 tbsp of creme fraicheFresh coriander leaves to garnish
Heat the oil and fry the onions, ginger, and garlic until golden. Add the tomato puree, garam masala, turmeric, chilli powder, sugar, salt and about ¼ cup of water to loosen.
Use a stick or mini blender and blend until smooth. Add the turkey leftovers, bubble once and stir in the creme fraiche. Check the turkey is piping hot before serving.
Garnish with coriander and serve with Sprout Rice
Sprout riceServes 4Prep: 5 minutesCook: 15 minutes
Ingredients:2 tbsp vegetable oil1 tsp mustard seeds1 cup basmati white rice2 cups water1 cup leftover brussels sprouts, halved
Heat the oil in a pan and add the mustard seeds. When they have popped, add the rice and stir for 5 seconds.
Pour in the water and cook until almost dry. Switch off the heat, gently stir in the brussels and put a lid and leave for 10 minutes on the hob. Serve with the Turkey Tikka Masala.
