Sandro's Healthy Pizza
Sandro's pizza is the best of both worlds - healthy AND tasty. Plus a great way to get the kids to eat some veg.
Serves 4
Ingredients:
Pizza base:
200g self-raising whole meal flour (plus extra for dusting)
Pinch of salt
1 tsp dried parsley
1 clove garlic, crushed
140g full fat natural yogurt
For the topping:
1 red onion, thinly sliced
2 tbsp balsamic vinegar
8 tbsp passata
1 tsp dried oregano
A pinch of salt
2 figs, sliced in 4
100g goats’ cheese, torn
Green pitted olives, halved
1 clove garlic, crushed
Pinch dried chilli flakes
A handful of fresh spinach
A drizzle of honey
Method:
Preheat the oven to 220C/ 200C fan/ Gas 7.
Place the onion into a bowl with the balsamic vinegar. Set to one side.
Pizza base: In a bowl mix the flour, salt, parsley, garlic and yogurt with approximately 1 ½ tbsp water or olive oil until a dough starts to form.
Lightly dust the worktop with flour and knead the dough for a few minutes until soft. Roll out with a floured rolling pin to your desired shape.
Place the dough on a baking tray lined with greaseproof paper.
For the topping: In a small bowl mix the passata, dried oregano and salt and mix to combine.
Spread the tomato sauce all over the pizza.
Add the figs, goats’ cheese and half the olives, garlic and chilli flakes to taste. Bake in the oven for about 15-20 minutes until crispy.
Remove from the oven, top with the remaining olives and the spinach. Drizzle with honey and enjoy.
