Sandro's Healthy Pizza

Sandro's pizza is the best of both worlds - healthy AND tasty. Plus a great way to get the kids to eat some veg.

Serves 4

Ingredients:

Pizza base:

200g self-raising whole meal flour (plus extra for dusting)

Pinch of salt

1 tsp dried parsley

1 clove garlic, crushed

140g full fat natural yogurt

For the topping:

1 red onion, thinly sliced

2 tbsp balsamic vinegar

8 tbsp passata

1 tsp dried oregano

A pinch of salt

2 figs, sliced in 4

100g goats’ cheese, torn

Green pitted olives, halved

1 clove garlic, crushed

Pinch dried chilli flakes

A handful of fresh spinach

A drizzle of honey

Method:

  • Preheat the oven to 220C/ 200C fan/ Gas 7.

  • Place the onion into a bowl with the balsamic vinegar. Set to one side.

  • Pizza base: In a bowl mix the flour, salt, parsley, garlic and yogurt with approximately 1 ½ tbsp water or olive oil until a dough starts to form.

  • Lightly dust the worktop with flour and knead the dough for a few minutes until soft. Roll out with a floured rolling pin to your desired shape.

  • Place the dough on a baking tray lined with greaseproof paper.

  • For the topping: In a small bowl mix the passata, dried oregano and salt and mix to combine.

  • Spread the tomato sauce all over the pizza.

  • Add the figs, goats’ cheese and half the olives, garlic and chilli flakes to taste. Bake in the oven for about 15-20 minutes until crispy.

  • Remove from the oven, top with the remaining olives and the spinach. Drizzle with honey and enjoy.
