As the January blues creep in, Lisa Faulkner delivers good mood food that will keep the whole family happy.
4 cod fillets about 350g each
1 packet of sage and onion stuffing mix
Zest of a lemon
2 tbsp chopped fresh dill or parsley
2 tbsp mayonnaise
1 tbsp Dijon mustard
1. Preheat the oven to 200C
2. Put the cod on a lined baking tray and rub with a little olive oil.
3. Mix the lemon zest , herbs, mayo and Dijon together and spread over the cod then sprinkle over the stuffing mix onto the cod. Drizzle with olive oil.
4. Bake for about 15/20 minutes depending on the thickness of your fish.
5. Serve with a spring onion mash and peas.
