Begin by making the green tea ice. Mix the milk and condensed milk in a bowl. Dissolve the green tea powder with water and mix into the milk and condensed milk mixture. Pour the mixture into freezer proof glasses or a baking dish and transfer to the freezer, uncovered.
After 1 hour, the granita should be slushy in the centre and icy at the edges of the dish. Use a fork to break up and mix the icier portions, pulling them to centre ofthe dish. Return to the freezer and repeat as needed until the granita is light and fluffy. Cover with a lid until ready to serve.
Next make the candied almonds. Heat a pan over a medium heat, when the pan is hot, pour all almond slices in the heated pan stirring. Gently stir in half the sugar with a spatula ensuring that no flakes are broken while gaining an even spread of sugar throughout the almonds.
When the first portion of sugar is melted into the almonds, add the remaining portion of sugar, again gently stir ensuring no almond flakes are broken, and the sugar is evenly spread and evenly caramelised through the nuts. Spread out the mixture onto a baking paperlined tray and separate the clusters of nut into individual pieces while still hot. Always wear gloves to protect the hands. Allow to cool down to an ambient temperature and keep in an airtight container.
Now make the rice sesame crisp. Place the sugar in a pan over a low heat and melt to a very light caramel. Add the soft butterpieces, a small portion at a time and keep whisking as you add, in order for the mixture to emulsify. This should result in a nice caramel; it shouldn’t have a layer of butter fat on top.
Add the Rice Krispies and black sesame seeds. Continue to stir with a rubber spatula to ensure the Rice Krispies and sesame seeds are covered well with caramel.
Spread thinly on a baking paper lined tray. Allow to cool and set, then crack apart into shards.
To serve: place a teaspoon of sweetened red bean into the bottom of each chilled serving bowl and add the green tea granita. Top with the rice sesame crunch, candied almonds, fruit, rice cakes and a drizzle of condensed milk.
