Turmeric roast chicken with roasted sweet potato chips with pomegranate molasses
Here's a twist on your standard chicken dinner - a spicy marinade! The turmeric has many health benefits, including improving skin health and slowing down the aging process.
The roasted sweet potato chips with pomegranate molasses provide an interesting addition to the dish too.
1.5 kilo whole chicken
For the paste:
8 cloves of garlic, peeled
4 green chillies
1 small bunch of fresh coriander
2 teaspoon turmeric powder
1 tsp cumin powder
1 tsp coriander powder
100ml coconut milk
1 tsp Maldon salt
In a blender or food processor blend all the ingredients except the chicken.
Rub the paste thoroughly on the chicken and leave at room temperature for 30 minutes
In the meantime, preheat the oven to 180C.
Place the marinated chicken in a roasting pan. Cover the chicken with loosely with foil and cook for 1 hour 30 minutes. Once cooked I like to crisp the skin under the grill for another 10 minutes. I let the roast chicken rest before carving and serving.
