James Martin's Cornish oven-roasted fish and sauce vierge

James Martin knows some of the best producers in the country, and this week he’s championing local fisherfolk with an easy to make dish that combines Cornish oven-roasted fish and sauce vierge.

Cornish oven-roasted fish and sauce vierge

Serves: 2

Ingredients

1 tbsp oil

1 tbsp butter

1 whole John Dory or other flat fish, gutted, scaled and trimmed or 2 fish fillets, haddock, mullet etc skin on

For the sauce

100ml extra virgin olive oil

2 cloves garlic, peeled

Juice and finely grated zest of 1 lemon

1 tsp coriander seeds crushed

20 cherry tomatoes, halved

1 small bunch parsley chopped

1 small bunch tarragon chopped

1 small bunch basil, chopped

Half a red onion peeled and sliced

Method

  • Preheat the oven to 230C, Fan 210C, Gas 8. Heat a large ovenproof non-stick frying pan over a medium heat, add the oil and the butter and fry the whole fish for a minute or so on each side. Place the frying pan into the oven and cook for about 4 minutes, or until the fish is just cooked through.

  • Alternatively, drizzle some oil on a large baking sheet, lay the fish fillets on the tray and place in the oven for about 4 minutes, or until the fish is just cooked through

  • Meanwhile, gently warm 100ml oil in a small saucepan. Add the garlic and allow to infuse for a couple of minutes. Add all the remaining ingredients and heat through for about 30 seconds.

  • Transfer the fish fillets to warmed plates and spoon over the sauce
