James Martin's lemon posset summer pudding
James is back with a simple summer pudding. Nothing could be easier than lemon posset - with just three ingredients, it's easy to make and guaranteed to impress!
Lemon posset with summer berries
150g caster sugar
600ml double cream
Zest of 2 lemons
75ml lemon juice zest
For the sauce
500g strawberries, hulled
Mixed summer berries
Lemon verbena leaves or basil
Heat the cream and sugar in a large saucepan and bring to the boil, whisking continuously. Reduce the heat and simmer for 1 minute.
Whisk in the lemon juice and zest. Take off the heat and pour into serving dishes. Chill for 4 hours, or overnight.
To make the sauce, blitz the strawberries and pass through a sieve
Top with berries, spoon over the sauce and serve with herbs to decorate
