Lisa Snowdon’s ultimate Christmas turkey burger

One of the best things about a Christmas dinner is always eating those leftovers! Well Lisa Snowdon is here to show us how to pimp those leftovers to the next level by bringing us her ultimate Christmas turkey burgers. Turkey topped with sweet cranberry sauce and oozy melted brie - what's not to love.

Ultimate Christmas turkey burger

Serves: 4

Ingredients

500g turkey thigh mince 2 tsp dried or fresh sage2-3 tsp onion salt / powder2-3 cloves of minced or crushed garlic Black pepper 1 egg yolk 1 wedge of Brie, sliced into 8 slices8 slices Parma ham4 tbsp cranberry sauce4 tbsp mayonnaise4 brioche buns, split in half and toasted4 baby gem lettuce leaves

To serve:Baked sweet potato chips and parsnips


Method

1. Preheat the grill to a medium-high heat.

2. Mix together the turkey thigh mince, sage, onion salt, garlic, pepper and egg yolk until combined. Shape into 4 patties and set aside.

3. Heat a drizzle of oil in a griddle pan and fry the burgers until thoroughly cooked through, approximately 5-6 minutes on each side. Place the cooked burgers on a baking tray, top with 2 slices of Brie and place under the grill for a few minutes until the cheese has melted.

4. Meanwhile, pan fry the Parma ham for around a minute on each side in a hot frying pan, until crisp. 

5. Assemble the burgers by placing cranberry sauce on the bottom of the toasted brioche bun, followed by lettuce, the turkey burger coated with Brie, Parma ham and the bun top coated in mayonnaise. Serve alongside baked sweet potato chips and parsnips.
