Juliet's delicious Pancake Day recipes

Happy Pancake Day! Whether you like yours classic with lemon and sugar, vegan, or fluffy with all the colours of the rainbow, Juliet Sear has a recipe to suit your tastes!

Vegan pancake stack

Ingredients

140g self-raising flour

2 tbsp unrefined golden caster sugar

10g of baking powder

1/2 tsp of salt

240ml soy milk

1tbsp apple cider vinegar

1/2tsp vanilla extract

Method

  • Place add all dry ingredients in a large bowl, whisk through to combine and aerate

  • Add wet ingredients to the dry mixture and whisk together, taking care not to over mix

  • Let batter sit for a couple minutes while your pan/griddle heats to medium-low

  • When your cooking surface is heated, lightly grease it (I use a little vegan butter)

  • Pour about 1/8 of batter into the pan (use a mug or ladle)

  • When the top begins to bubble, flip the pancake and cook until golden and puffy

  • Serve warm with pure maple fresh fruit, or any toppings you fancy!

American rainbow stack

Ingredients

1 pinch of salt

1/2 tsp baking powder baking powder

1 heaped tsp of caster sugar

2 medium eggs (beaten)

30g of butter (melted and cooled)

300ml milk

220g self-raising flour

Butter for frying

Food colouring gel (I used yellow, orange, blue, green and red)

Optional

Spray cream

Maple syrup

Sprinkles

Method

  • Whisk dry ingredients together

  • Beat egg and butter into the milk

  • Beat all together and leave to stand for a few mins

  • Split mixture evenly into five bowls, add a small amount of colouring and whisk

  • Then fry in a pan with a little butter

  • Stack then cover with maple syrup, spray cream and sprinkles

Classic pancakes

Ingredients

250ml milk

1 medium free range

125g plain flour

1tsp caster sugar

A pinch of salt

Vegetable oil for frying

Method

  • Break egg into milk and whisk

  • Mix dry ingredients together

  • Gently incorporate half the liquid mixture into the dry and mix

  • Then mix in the rest until you have a smooth consistency

  • Rest for a few minutes

  • Heat vegetable oil in pan

  • Pour mixture into pan and spread around until fully covered

  • Flip when the sides start to cook and curl

  • Finish with sugar and lemon juice
