Phil Vickery's top five toasties

Phil’s here to give the humble toastie a makeover! He’s showing us five new recipe ideas, perfect for a lockdown lunch.

Cheese, spinach and egg toastie

Preparation time: 15 minutes

Cooking time: 5-6 minutes

Makes: 2 toasties

Ingredients

1 tbsp soft butter4 pieces of bread8 slices any cheese2 eggsHandful baby spinach leavesDash Worcester sauce

Method

1. Preheat the toastie maker, or alternatively place a frying pan on the hob and gently warm

2. Butter all of the slices of bread, then place 2 of them butter side down into the toastie maker (or onto the frying pan)

3. Lay 2 slices of cheese on the 2 slices of bread

4. Carefully crack one egg onto each slice of bread, then top both with a few spinach leaves and a dash of Worcester sauce each

5. Top both with the remaining slices of cheese and complete the toasties by topping with the 2 remaining slices of bread, butter side up

6. Press and cook for 5-6 minutes (or fry gently on both sides in the pan with butter until golden)

Ham, cheese and tomato toastie

Preparation time: 15 minutes

Cooking time: 5-6 minutes

Makes: 2 toasties

Ingredients

1 tbsp soft butter4 pieces of bread2 thick slices of cheddar2 nice thick slices of cooked hamPeeled, sliced tomatoesEnglish mustardBlack pepper

Method

1. Preheat the toastie maker, or alternatively place a frying pan on the hob and gently warm

2. Butter all of the slices of bread, then place 2 of them butter side down into the toastie maker (or onto the frying pan)

3. Lay 2 slices of cheese on the 2 slices of bread, then the ham, the tomato and a dash of mustard and a little pepper on each slice

4. Complete the toasties by topping with the 2 remaining slices of bread, butter side up

5. Press and cook for 5-6 minutes (or fry gently on both sides in the pan with butter until golden)

Banoffee toastie

Preparation time: 15 minutes

Cooking time: 5-6 minutes

Makes: 2 toasties

Ingredients

1 tbsp soft butter4 pieces of bread2 small or 1 large banana, peeled, then roughly chopped2-3 tbsp toffee sauceSea saltBlack pepper

Method

1. Preheat the toastie maker, or alternatively place a frying pan on the hob and gently warm

2. Butter all of the slices of bread, then place 2 of them butter side down into the toastie maker (or onto the frying pan)

3. Spoon on the chopped banana over both slices then drizzle over a little toffee sauce. Sprinkle with a little salt & pepper.

4. Complete the toasties by topping with the 2 remaining slices of bread, butter side up

5. Press and cook for 5-6 minutes (or fry gently on both sides in the pan with butter until golden).

Chicken tikka, mint and red onion toastie

Preparation time: 15 minutes

Cooking time: 5-6 minutes

Makes: 2 toasties

Ingredients

1 tbsp soft butter4 pieces of bread4 tbsp mayo2 tbsp fresh chopped mint¼ thinly sliced red onion2 tsp mango chutney150g cooked chicken tikka2 tbsp fresh coriander

Method

1. Preheat the toastie maker, or alternatively place a frying pan on the hob and gently warm

2. Butter all of the slices of bread, then place 2 of them butter side down into the toastie maker (or onto the frying pan)

3. In a bowl, mix the mayo, mint, onion and chutney together, then spread onto the 2 slices of bread

4. Lay out the chicken tikka on each slice of bread and add a little fresh coriander

5. Complete the toasties by topping with the 2 remaining slices of bread, butter side up

6. Press and cook for 5-6 minutes (or fry gently on both sides in the pan with butter until golden)

Lobster macaroni and cheese toastie

Preparation time: 15 minutes

Cooking time: 5-6 minutes

Makes: 2 toasties

Ingredients

1 tbsp soft butter4 pieces of bread8 thin slices of macaroni cheese (see recipe below)150g cooked lobster or prawns or crab, chopped

Method

1. Preheat the toastie maker, or alternatively place a frying pan on the hob and gently warm

2. Butter all of the slices of bread, then place 2 of them butter side down into the toastie maker (or onto the frying pan)

3. Lay one thin slice of macaroni cheese on each slice of bread

4. Add the chopped, cooked fish, on both slices, then top with a further slice of macaroni cheese

5. Complete the toasties by topping with the 2 remaining slices of bread, butter side up

6. Press and cook for 5-6 minutes (or fry gently on both sides in the pan with butter until golden)

Macaroni cheese

Preparation time: 15 minutes

Cooking time: 20 minutes in total

Serves: 2

Ingredients

200g dried macaroni2 tbsp olive oil1 medium onion, peeled and very finely chopped275mls milk½ 10g vegetable stock cube50g butter, softened40g plain flour175g grated strong CheddarPinch or two of nutmeg1 level tbsp English mustardSaltFreshly milled pepper4 tbsp chopped fresh basil

Method

1. Cook the macaroni in a pan with plenty of boiling water, until just cooked, then drain well. Add a tbsp oil to stop the pasta sticking together.

2. In another pan, warm the olive oil and add the onion and cook for 5 minutes to soften. Add the milk and stock cube then bring to the boil.

3. Meanwhile, mix the butter and flour together, to form a paste

4. Once the milk is boiling, turn down the heat to a simmer, then whisk in the butter and flour mixture, and cook for 2 minutes

5. Take off the heat and stir in 125g of the cheese and the cooked macaroni

6. Add a pinch or two of nutmeg, mustard, pepper, salt and the chopped basil

7. Spoon into a cling film lined 2lb loaf tin, and chill in the fridge overnight so that this can be sliced for the toastie
