Phil's chicken caesar burger
Earlier, Phil nipped over to London’s new Amazon fresh store, showing us the new cashless way to shop. Now, he’s back to whip up a budget friendly and flavoursome dish using the ingredients he bought from his supermarket sweep!
Phil's chicken caesar burger
Serves 4
Ingredients
Dressing
2 medium egg yolks, yellower the better
1 clove garlic crushed
1 tbsp any vinegar
3 tsp Dijon mustard
4-6 salted anchovy fillets
Pinch black pepper ground
200ml extra virgin olive oil, roughly
Touch of cold water, approx
Chicken
1 egg white
2 tsp cornflour or any starch
4 x 115g boneless chicken breast, free of skin and sliced in half.
6-8 tbsp Panko breadcrumbs
2 tbsp olive oil
75g unsalted butter
1x Little Gem, lettuce
8 slices of streaky bacon, cooked until crispy
150g croutons, roughly crushed
75-85g roughly, long shaved Parmesan slices
2 medium, ripe tasty tomatoes, sliced
4 large sesame burger buns
Method
1. For the dressing: place the egg yolks, garlic, vinegar, mustard, anchovy, black pepper, and blitz in a liquidiser until smooth. Then add the oil in a thin stream to emulsify. If the dressing is too thick then add a touch of water. Check the seasoning.
2. The dressing should coat the leaves nicely but not be too thick, make sure the lettuce is well drained.
3. For the chicken: Whisk the egg white and cornflour together really well. Add the chicken slices and coat well.
4. Drain and dust each side of the chicken breast with a few breadcrumbs, pat down well.
5. Heat a medium frying pan and heat the oil and butter, then sauté the slices of chicken until just cooked, approximately 2-3 minutes on each side, and then keep warm.
6. Once cooked, pop the chicken into a bowl along with a few lettuce leaves, bacon pieces, a few croutons and Parmesan slices, then mix lightly with the dressing.
7. Place the chicken, lettuce and tomatoes into a toasted burger bun, layered nicely.
8. Serve with skinny fries
