Viva España! Phil's sizzling summer tapas

Viva España! Phil’s in the kitchen with a Friday feast - a taste of Spain with his super easy tapas dishes. You can holiday at home with his patatas bravas, chorizo in cider, Padrón peppers, prawns with sherry and garlic!

Patatas bravas

Serves 4-6

Ingredients

2 tbsp olive oil

1 small onion chopped finely

1 clove garlic finely chopped

1 x 400g can chopped tomatoes in juice

1 tbsp tomato puree

½ tsp sweet paprika

2 tbsp chopped fresh parsley

750g potatoes, peeled and cut into 2cm fingers

6 tbsp olive oil

Salt

Ground pepper


Method

1. Preheat the oven to 200C gas 6.

2. Toss the washed and dried potatoes in olive oil and pepper, the roast in then hot oven for 20-30 minutes until cooked and have a nice colour. You may need to stir occasionally to get an even colour.

3. Next heat the oil and add the onions and garlic and soften.

4. Next add the tomatoes, puree and paprika and simmer until nice and thick.

5. Remove from the heat, add a dash of olive oil, salt, pepper and the fresh parsley.

6. Serve the potatoes with a generous dollop of the tomato sauce.


Chorizo in cider

Serves 4-6

Ingredients

1 tbsp olive oil

500g soft cooking Chorizo

500ml sweet cider

2 tbsp chopped fresh parsley


Method

1. Heat the oil in a non-stick frying pan.

2. Slice the chorizo in long diagonals.

3. Gently sauté slices until they extrude their lovely colourful juices.

4. Add the cider and reduce until syrupy.

5. Remove the pan from then heat, leave to cool for 5 minutes, then add the parsley and serve.


Prawns in sherry and garlic

Serves 4-6

Ingredients

2 tbsp olive oil

2 cloves garlic, finely chopped

pinch dried chilli flakes

½ tsp smoked paprika

350g wild shelled prawns, sliced in half lengthways

3-4 tbsp dry sherry

Salt

Ground pepper

Lemon wedges


Method

1. Heat the oil and add the garlic, chilli and paprika.

2. Cook for 2 minutes, then add the prawns and sauté for 3-4 minutes.

3. Add the sherry and reduce quickly.

4. Season with salt and pepper.

5. Serve with lemon wedges.
