Nothing beats chocolates for Valentine's Day, and Paul’s pinata chocolate hearts are bursting with all your favourite treats - the perfect gift.
Valentine's pinãta hearts
350g dark chocolate
40g cocoa powder
Sprinkles of your choice (edible hearts, gold leaf, edible sugar flowers)
Love note/gift, optional
*To create the hearts you will need a heart mould, these are available online, simply choose the size of mould you like.
To create the lacy effect for the pinãta heart: Melt 200g of dark chocolate to 55°C (use a digital thermometer), over a pan of hot water in a metal or glass bowl.
Chop up 150g of dark chocolate and mix it into the melted chocolate and keep mixing until it's all melted and at a temperature of 30°C
Mix in 40g of cocoa powder until the chocolate thickens slightly
Make sure your mould is very clean by using a microfibre cloth or cotton wool to polish the inside
Fill a piping bag with the chocolate and cut a 2 to 3 mm hole in the tip
In swirling motions pipe the chocolate over the heart mould covering one layer leaving gaps like a lace effect
Scrape the mould to clean the edges and allow the chocolate to set for 2 minutes in the fridge
Repeat this process three times to layer up the lace work
Scrape the mould clean and place it into the fridge for 15 minutes
The hearts will fall out of the mould when inverted onto a soft surface (tea towel). If the hearts stick in the mould pop them in the freezer for 5 minutes – this is always due to the tempering of the chocolate not being quite correct and practice will make this easier.
Fill the hearts with your favourite edible sprinkles, a love note, a special gift or more chocolates
Warm an empty saucepan on the heat and turn upside down. Wipe the base clean and take the top heart and melt the edge on to the warm pan base then stick on top of the other heart to create a sealed heart.
Decorate the top of the heart with edible hearts, gold leaf, edible sugar flowers or some shimmer powder
PAUL’S TOP TIP: As an alternative and stunning dessert use one half of the chocolate hearts as an edible chocolate bowl and fill with berries, brownie cubes, chocolate mousse or ice cream, chocolate sauce, sprinkles and sparkles…..this can be as adventurous as you can make it, even add an indoor safe sparkler.
