Fitwaffle’s Loaded Hash BrownsRecipe taken from Eloise’s book ‘Easy Air fryer’
Makes: 4
Ingredients
2 large floury potatoes (I use maris piper)1 medium egg, beaten1tsp cornflourOlive oil spray40g cheese, gratedSalt and pepper
For the toppingsSour creamChopped fresh chivesCooked crumbles bacon bits
Method
1. Peel and coarsely grate your potatoes. Then soak in a medium-large bowl of cold water for 10 minutes.
2. Drain the grated potato. Dry it in a clean cloth or tea towel, squeezing to remove the excess water, then return to the bowl.
3. Add the egg, cornflour and some salt and pepper and mix it all together.
4. Preheat the air fryer to 200°C (400°F).
5. Spray the air fryer rack or basket with oil and divide the mixture into 4 equal patties. Place in the air fryer and spray with oil again. Cook for 14-15 minutes until crisp and golden.
6. Sprinkle the grated cheese on top, then air fry again for 2-3 minutes until the cheese has melted.
7. For the toppings: Dollop on your favourite toppings. I used sour cream, fresh chives and cooked crumbled bits of bacon. Serve straight away and enjoy!
Fitwaffle’s Cinnamon Pastry SwirlsRecipe taken from Eloise’s book ‘Easy Air fryer’

Ingredients
30g unsalted butter, softened3tbsp light brown sugar (dark is also fine)1tsp ground cinnamon1 sheet ready-rolled puff pastry1 egg + tsp milk or water, for the egg washGranulated sugar, to sprinkle (optional)
Method
1. In a small bowl, mix together the butter, light brown sugar and cinnamon with a fork or a spoon to make a paste.
2. Unravel the puff pastry and lay it out in a landscape position, then spread the cinnamon butter over the right half of the pastry and fold the pastry over the cinnamon butter, like you’re closing a book.
3. Slice the pastry vertically into 5 strips, then slice each strip vertically in half again, leaving just the tops still connected.
4. Twist the two branches of a strip around each other, then curl into a swirl shape and tuck the end underneath, squeezing it together gently so it doesn’t unravel. Repeat to make the remaining swirls.
5. In a small bowl, beat the egg and milk or water together to make the egg wash.
6. Preheat the air fryer to 160°C (325°F).
7. Line the air fryer rack or basket with a sheet of thick baking paper. Place your swirls in the air fryer at least 5cm apart, then brush with the egg wash and sprinkle with granulated sugar, if using.
8. Air fry for 13-15 minutes until golden brown on top. Leave to cool slightly and they’re ready to eat. Enjoy!
